Ingredients:
  • 250g caster sugar
  • 80ml water
  • 825g can whole plums
  • 80g icing sugar
  • 8.80 gm vanilla essence
  • 1 orange, rind grated
  • 200g butter, melted
  • Cream, to serve
Instructions:
  • Preheat the oven to 180°C and line a 23cm round cake pan with non-stick baking paper. In a saucepan over medium-high heat, combine 1 cup (250g) caster sugar and 1/3 cup (80ml) water. Stir until the sugar is dissolved. Allow the mixture to simmer for 7-10 minutes or until it turns golden.
  • Transfer the mixture into a prepared pan. Drain a 825g can of whole plums, reserving the syrup. Cut the plums in half and remove the stones. In a separate bowl, whisk together 4 eggs, 2/3 cup (80g) icing sugar, 2 teaspoons vanilla essence, and the grated rind of 1 orange until the mixture is pale and thick.
  • Gently incorporate 200g of melted butter and 2 cups (300g) of self-raising flour. Spread the mixture over the plums. Bake for 35-40 minutes. Serve the warm pudding topped with the reserved syrup and cream.
