Delicious make-ahead French toast with Bananas Foster flavor, no rum needed.
Ingredients:
  • 1 1/2 cups packed brown sugar
  • 1/2 cup butter or margarine, melted
  • 1/4 cup light corn syrup
  • 1/2 cup chopped walnuts
  • 3 medium bananas, sliced
  • 1 loaf (about 1 lb) sliced unfrosted firm cinnamon bread
  • 6 large eggs
  • 1 1/2 cups milk
  • Powdered sugar, if desired
Instructions:
  • Prepare a 13x9-inch (3-quart) glass baking dish by spraying it with cooking spray. In a large bowl, combine brown sugar, butter, corn syrup, and walnuts until smooth. Add bananas and mix gently. Transfer the mixture into the baking dish.
  • Set aside the bread ends for a different recipe as they struggle to absorb the egg mixture effectively. Layer two pieces of bread over the banana mixture, tearing them to size if necessary.
  • Whisk eggs, milk, and vanilla in a medium bowl until smooth. Pour the mixture over the bread, cover tightly, and refrigerate for at least 1 hour, but no longer than 24 hours.
  • Preheat oven to 325°F. Bake uncovered for 45 to 55 minutes until a knife inserted in the center comes out clean. Serve by flipping portions upside down, drizzling with sauce from the dish, and dusting with powdered sugar.
