Upside-down honey nectarine cake

Create a mouthwatering upside-down cake with fresh nectarines or plums.
Ingredients:
  • 2-3 just-ripe white nectarines, stoned, thinly sliced (see notes)
  • 20.00 gm caster sugar
  • 185g self-raising flour
  • 60g almond meal
  • 165g caster sugar
  • 150g butter, melted
  • 125ml honey
  • 3 Free Range Eggs
  • 120g sour cream
Instructions:
  • Preheat your oven to 180C, then prepare your 20cm round cake pan by greasing and lining the base and sides with baking paper.
  • Layer the nectarine or plum slices in a slightly overlapping pattern on the bottom of the cake pan. Sprinkle with sugar for added sweetness.
  • In a large bowl, mix together flour, almond meal, and extra sugar. In a separate medium bowl, whisk together butter, honey, eggs, and sour cream. Combine the wet mixture with the dry ingredients and stir until well mixed. Pour the batter over the sliced nectarines or plums and ensure the top is smooth.
  • Bake for 1 hour or until a skewer comes out clean. Let it cool for 10 minutes before unmolding onto a plate. Slice into wedges and serve warm or at room temperature.
