Upside-down spiced honey and apple cake

Delicious spring dessert to end a meal.
Ingredients:
  • 57.20 gm honey
  • 1 pink lady apple, thinly sliced crossways
  • 125g butter, softened
  • 155g brown sugar
  • 60ml honey
  • 3 eggs
  • 75g self-raising flour
  • 40g plain flour
  • 55g almond meal
  • 5.00 gm ground ginger
  • 1/2 tsp ground cloves
  • 80g sour cream
  • 1 pink lady apple, peeled, cored, finely chopped, extra
  • Natural yoghurt, to serve
Instructions:
  • Heat your oven to 160C and generously prepare a 20cm round springform pan by greasing and lining it with baking paper.
  • Drizzle the honey over the base of the pan. Arrange overlapping apple slices on top and finish by drizzling the remaining honey.
  • In a medium bowl, use an electric mixer to cream together butter, sugar, and extra honey until smooth. Add eggs one at a time, beating well after each addition. Mix in combined flours, almond meal, ginger, cinnamon, and cloves until just combined. Stir in sour cream and extra chopped apple. Transfer the mixture to the prepared pan and bake in a preheated oven for 1 hour. Once a skewer inserted into the center comes out clean, remove from the oven. Let it cool for 10 minutes before turning onto a serving plate. Enjoy warm or at room temperature with yoghurt, if desired.
