Indulge in guilt-free decadence with this unique strawberry and cashew upside-down cake made with nutritious broccoli flour. Sure to leave your guests craving more!
Ingredients:
  • 8.00 gm baking powder
  • 750g strawberries, hulled, halved
  • 110g (1/2 cup) raw sugar
  • 80g (1 1/2 cups) raw cashews
  • 35g (1/3 cup) desiccated coconut
  • 40.00 ml broccoli flour/powder (find at selected supermarkets or health food stores)
  • 95g (1/2 cup) potato flour
  • 48.00 gm tahini
  • 1 orange, rind finely grated, juiced
  • 2 tsp vanilla bean paste
  • 110g (1/2 cup) solidified coconut oil, melted
  • 260g (1 cup) thick Greek-style vanilla yoghurt
  • 0.63 gm ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
Instructions:
  • Preheat your oven to 180C/160C fan forced. Line a large baking tray with parchment paper and grease a deep, 20cm round cake pan. Line the base and sides with baking paper.
  • Arrange strawberries in a single layer on a baking tray. Sprinkle 2 tablespoons of sugar evenly over the top. Bake for 20 minutes or until strawberries are softened. Let them cool before serving.
  • Place the strawberries at the bottom of the pan, keeping any tray juices. In a food processor, pulse the cashews until they become fine crumbs. Add coconut, flours, tahini, baking powder, cinnamon, orange rind, 125ml of orange juice, vanilla, coconut oil, eggs, and the rest of the sugar. Blend until just combined, scraping the sides and processing again until smooth.
  • Transfer the delightful cake batter into the pan. Bake for 45‐50 minutes, or until a skewer inserted in the center emerges clean. Allow it to rest in the pan for 10 minutes to cool slightly before enjoying.
  • Make spiced yogurt by combining all ingredients in a bowl and stirring until smooth.
  • Place the cake on a serving plate with the strawberry side facing up. Enjoy it warm with a side of spiced yogurt.
