Use-it up veggie noodle stir-fry recipe

Get your kids excited to eat veggies with this easy stir fry. Involving kids in cooking increases their likelihood of enjoying the meal!
Ingredients:
  • 500g packet frozen stir-fry vegetables
  • 4 x 72g pkts 2 Minute Noodles Oriental
  • 44.00 gm sweet chilli sauce (see note)
  • 100.65 gm oyster sauce
  • 21.00 gm salt-reduced soy sauce
  • 18.40 gm vegetable oil
  • 1 brown onion, cut into thin wedges
  • 400g can corn kernels, rinsed, drained
  • 3 garlic cloves, crushed
  • 62.50 ml chopped fresh coriander (optional)
Instructions:
  • Boil vegetables until tender in a large frying pan or wok. Remove using a slotted spoon and refresh in cold water. Drain well.
  • Place the noodles in the same pan or wok, cook for 1 minute until softened and separate. Drain and rinse under cold water. Drain again.
  • Combine sauces and one sachet of seasoning in a bowl, then set aside.
  • In the same pan or wok, heat oil over high heat. Stir in the onion and cook for 3 minutes until tender. Add the corn and garlic, stir-frying for 2 more minutes until fragrant.
  • Combine fresh, colorful vegetables, cooked noodles, and flavorful sauces in the sizzling pan. Stir-fry the ingredients for 2-3 minutes, ensuring they are heated through. Serve the vibrant dish sprinkled with fragrant coriander, if desired.
