Vanilla bean and cardamom-sugared stars

Celebrate the holidays with tasty star-shaped cookies.
Ingredients:
  • 250g butter, softened
  • 150g caster sugar
  • 1/2 tsp ground cardamom
  • 265g plain flour
  • 120g rice flour
  • 1 eggwhite, lightly whisked
  • White sugar, to sprinkle
  • 1 vanilla bean, split
  • 110g white sugar
Instructions:
  • Preheat your oven to 160°C and prepare 2 baking trays by lining them with parchment paper.
  • In a medium bowl, use an electric mixer to blend together butter, sugar, vanilla bean paste, and cardamom until pale and creamy. Add plain flour and rice flour, then stir with a wooden spoon until fully combined. Transfer the dough to a lightly floured surface and knead gently until smooth.
  • Roll the dough out to a 4mm thickness using a rolling pin. Use a 3cm-diameter star-shaped pastry cutter to cut out stars and place them on the lined trays.
  • Brush the stars with egg white and sprinkle with sugar. Bake in a preheated oven for 10-12 minutes until lightly golden and cooked through. Allow to cool completely on the trays.
  • Scrape vanilla bean seeds into a bowl, mix with sugar, and sprinkle over the dish before serving.
