Vanilla bean sugar cookie crinkles - a delightful fusion of two beloved Christmas treats.
Ingredients:
  • 3 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups granulated sugar
  • 1 cup butter, softened
  • 2 vanilla beans, cut in half lengthwise, scraped
  • Additional powdered sugar for sprinkling, if desired
Instructions:
  • Preheat the oven to 325°F. Combine flour, baking powder, baking soda, and salt in a small bowl; set it aside.
  • In a large bowl, use an electric mixer to beat granulated sugar, softened butter, and seeds from 2 vanilla beans until fluffy, about 1 minute. Scrape the sides of the bowl. Add eggs one at a time, beating just until smooth. Then, beat in the flour mixture on low speed until well blended. Cover the dough and let it stand at room temperature for 10 minutes.
  • Roll the dough into 60 (1 1/4-inch) balls. Prepare a small bowl with 1 cup of powdered sugar. Coat each cookie with powdered sugar, shaking off any excess. Arrange the cookies on ungreased cookie sheets, spacing them 2 inches apart.
  • Bake for 12 to 14 minutes until edges turn light brown. Allow to cool for 2 minutes before transferring to a cooling rack. Cool completely for at least 15 minutes. Sprinkle with a little extra powdered sugar and store in an airtight container at room temperature.
