Vanilla cherry iced tea

Revitalize with a zesty and fruity iced tea.
Ingredients:
  • 415g can black cherries in syrup, drained reserving syrup
  • 70g (1/3 cup) caster sugar
  • 1 vanilla bean, split lengthways
  • 4 strong black tea bags
  • 500ml (2 cups) boiling water
  • 750ml (3 cups) cold water
  • 1 orange, thinly sliced
  • Ice cubes, to serve
Instructions:
  • In a small saucepan over medium-low heat, combine the reserved syrup and sugar. Use a small, sharp knife to scrape the seeds from the vanilla bean into the pan, then add the bean. Stir for 3 minutes until the sugar dissolves. Bring to a boil, then reduce the heat to low and simmer for 5-7 minutes until the syrup thickens slightly. Remove from heat and stir in the cherries. Allow it to cool completely.
  • In a heatproof jug, steep tea bags in boiling water for 10 minutes to infuse. Remove and discard the tea bags. Allow the tea to cool completely before using.
  • In a pitcher, mix together the cherry mixture, brewed tea, cold water, orange slices, and ice cubes.
