Vanilla Nectarine Pie

Delicious nectarine pie, best enjoyed with a scoop of vanilla ice cream.
Ingredients:
  • 1 refrigerated pie crust, softened as directed on box
  • 6 medium nectarines, sliced (6 cups)
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon vanilla
  • 2 teaspoons orange juice
  • 2/3 cup Gold Medal™ all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1 tablespoon grated orange peel
  • 1/8 teaspoon salt
  • 3 tablespoons cold butter
Instructions:
  • Preheat the oven to 375°F and carefully press the pie crust into a 9-inch glass pie plate following the instructions on the box for a One-Crust Filled Pie.
  • Combine the nectarines, granulated sugar, cornstarch, vanilla, and orange juice in a medium bowl. Transfer the filling into the crust-lined plate.
  • Combine flour, brown sugar, orange peel, and salt in a medium bowl. Add butter and blend using a pastry blender or two knives until mixture resembles coarse crumbs. Sprinkle over nectarines.
  • Bake for 30 minutes. Cover crust edge with foil strips to avoid over-browning; bake for an additional 10 minutes until golden brown. Let it cool for 30 minutes before serving.
