Create versatile tuile cookies - customize with chocolate or vanilla. Shape hot, thin, buttery cookies for garnish on ice cream or stylish dessert cups.
Ingredients:
  • 0.5 cup unsalted butter, room temperature
  • 1 cup confectioners' sugar, sifted
  • 4 egg whites
  • 0.5 teaspoon vanilla extract
  • 1 cup cake flour
Instructions:
  • Using an electric mixer on medium-high speed, cream together the butter and sugar until light and fluffy. Add the egg whites one at a time, followed by the vanilla, and continue to beat until well combined.
  • Reduce the speed and incorporate the flour or flour-cocoa mixture until just blended. Be careful not to overmix. Cover the bowl and refrigerate for at least 1 hour.
  • Preheat the oven to 325°F (165°C) for a perfect bake.
  • Cut a 3 1/2-inch hole in cardboard or plastic to make a template for the tuiles. Place the stencil on a lined cookie sheet. Spread batter evenly inside the hole using a small offset spatula. Lift off the stencil and repeat for more cookies.
  • Bake in the oven until edges are lightly browned, about 8-10 minutes.
  • Take the tuiles out of the oven and, while they are still warm, carefully lift them from the pan and shape them over a rolling pin. Let them sit for a few minutes to set and cool down. Store in an airtight container.
