Vanilla: Enhances desserts and tea-time treats with its delicious simplicity.
Ingredients:
  • 185g butter, softened
  • 430g caster sugar
  • 2 tsp vanilla-bean paste
  • 250ml milk
  • 5.00 gm ground cinnamon
  • 55g caster sugar
  • 30g butter, melted, extra
Instructions:
  • Preheat the oven to 180C and generously grease and line two 11x21cm loaf pans.
  • In a large bowl, use an electric mixer to whip together butter, sugar, and vanilla until light and fluffy. Gradually add eggs one by one, mixing well after each. Gently mix in flour and milk alternatively until just combined.
  • Divide the batter evenly between the pans and gently level the tops. Bake for 30 minutes or until a toothpick inserted in the centers comes out clean. Take out from the oven.
  • Mix the cinnamon and extra sugar in a small bowl. Transfer the cakes to a wire rack and brush evenly with extra butter. Sprinkle with the cinnamon sugar mixture. Serve warm or at room temperature.
