Crispy air-fried potato skins filled with tasty vegan ingredients.
Ingredients:
  • 2 medium russet potatoes
  • olive oil cooking spray
  • 4 tablespoons vegan shredded Cheddar-style cheese (such as Daiya®)
  • 4 tablespoons diced tomatoes with green chile peppers (such as RO*TEL®)
  • 4 tablespoons prepared textured vegetable protein (TVP)
Instructions:
  • Prepare the potatoes by washing them and using a fork to puncture holes in the skin.
  • Microwave potatoes for 5 minutes on each side. Halve them lengthwise and carefully scoop out flesh, leaving a 1/4-inch layer inside the skins.
  • Preheat the air fryer to 350 degrees F (175 degrees C). Lightly spray olive oil cooking spray inside the potato shells. Place potatoes in the air fryer basket, hollowed side facing up.
  • Air fry until edges are beginning to crispen, approximately 5 minutes. Remove from air fryer and stuff each potato skin with roughly 1 tablespoon of vegan cheese. Place back into the air fryer basket and cook until cheese is melted, for about 5 to 7 minutes.
  • Sprinkle 1 tablespoon diced tomatoes and 1 tablespoon textured vegetable protein over the cooked potato skins to enhance the flavor.
