Vegan black bean quesadillas with creamy bean sauce, spices, and nutritional yeast for a flavorful Mexican twist.
Ingredients:
  • 1 (15 ounce) can great Northern beans, drained and rinsed
  • 0.75 cup diced tomatoes
  • 1 clove garlic
  • 0.33333334326744 cup nutritional yeast
  • 1 teaspoon ground cumin
  • 0.25 teaspoon chili powder
  • salt to taste
  • 1 pinch cayenne pepper, or to taste
  • 0.5 cup black beans, drained and rinsed
  • 1 tablespoon olive oil, or as needed
  • 8 whole grain tortillas
  • cooking spray
Instructions:
  • In a food processor, blend together great Northern beans, 3/4 cup tomatoes, and garlic until smooth. Add nutritional yeast, cumin, chili powder, salt, and cayenne pepper, and blend until well combined.
  • Pour the bean mixture into a spacious bowl. Add the black beans and the leftover 1/4 cup of tomatoes.
  • In a large skillet over medium-high heat, warm the olive oil. Add a tortilla to the skillet and spread 1/4 cup of filling on top. Top with another tortilla and cook for about 10 minutes until the filling is heated through.
  • Lightly coat the top tortilla with cooking spray and flip the quesadilla. Cook until the second side is lightly browned, 3 to 5 minutes. Repeat for the remaining tortillas and filling.
