Simple and flavorful vegan burritos, perfect for family meals.
Ingredients:
  • 2.25 cups water
  • 1 cup uncooked brown rice
  • 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  • 3 teaspoons ground cumin
  • 2 teaspoons ground turmeric
  • 1 teaspoon chopped fresh basil
  • 1 pinch garlic powder, or to taste
  • 1 pinch salt and ground black pepper to taste
  • 1 pinch seasoned salt, or to taste
  • 2 large red potatoes, cubed
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 1 clove garlic, minced, or to taste
  • 1 (15 ounce) can black beans, rinsed and drained
  • 6 flour tortillas
  • 1 cup fresh spinach, or to taste
  • 1 cup chopped romaine lettuce, or to taste
  • 0.25 cup salsa, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a baking sheet.
  • In a saucepan, bring water and brown rice to a boil. Stir in diced tomatoes with chile peppers. Cover, reduce heat to medium-low, and simmer for about 50 minutes until rice is tender and liquid has been absorbed.
  • Combine cumin, turmeric, basil, garlic powder, salt, pepper, and seasoned salt in a large bowl. Drizzle with olive oil and mix well. Coat potatoes with the mixture evenly. Arrange potatoes in a single layer on the baking sheet.
  • Roast in the preheated oven until easily pierced with a fork, for 15 to 30 minutes, adjusting based on cube size, flipping halfway through.
  • As the potatoes cook, sauté bell pepper and onion in a hot skillet over medium heat until softened, about 5 minutes. Stir in garlic and cook for another minute. Set aside.
  • Warm black beans gently in a saucepan over medium-low heat for 2-3 minutes until heated through. Keep them warm until ready to serve.
  • Warm the tortillas in a separate skillet over low heat for 1 to 2 minutes or follow the package instructions.
  • Place tortillas on a flat surface and fill with cooked rice, beans, potatoes, pepper-onion mixture, spinach, romaine lettuce, and salsa to your liking. Roll them up into burritos and enjoy.
