Ingredients:
  • 1.5 cups unsalted raw cashews
  • 3 tablespoons lemon juice
  • 1 teaspoon apple cider vinegar
  • 0.25 teaspoon salt, or more to taste
  • 3 tablespoons chopped fresh chives
Instructions:
  • In a bowl, cover cashews with hot water and let soak for 5 to 10 minutes. Drain and blend in a blender.
  • Combine 1/2 cup water, lemon juice, vinegar, and salt in a blender; blend until smooth, pausing to scrape down the sides as needed. Gently fold in chives.
  • Enjoy immediately or allow to cool in the fridge before serving.
