Vegan Cinnamon Rolls

Indulgent cinnamon rolls perfect for everyone, made with flax seed, vanilla almond milk, and aromatic spices.
Ingredients:
  • 0.75 cup vanilla-flavored almond milk
  • 2 tablespoons vegetable oil
  • 0.25 cup warm water
  • 3 tablespoons warm water
  • 3 tablespoons ground flax seeds
  • 3.25 cups all-purpose flour, divided
  • 1 (.25 ounce) package active dry yeast
  • 0.5 teaspoon sea salt
  • 1.25 cups brown sugar
  • 1 teaspoon vanilla extract, or to taste
  • 0.5 teaspoon almond extract, or to taste
  • 1 teaspoon ground cinnamon, or to taste
  • ground nutmeg, or to taste
  • 0.5 teaspoon ground cardamom, or to taste
  • 3 tablespoons vegetable oil
  • 2 cups chopped pecans
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a 9x13-inch glass baking pan.
  • Warm up almond milk until frothy over medium heat for approximately 5 minutes. Take off heat and mix in 2 tablespoons of vegetable oil. Allow the milk to cool until it reaches a lukewarm temperature.
  • Combine the warm water and ground flax in a measuring cup, stirring until well mixed.
  • In a large bowl, whisk together 2 1/4 cups flour, white sugar, yeast, and salt. Pour in the milk mixture and water mixture, then mix until well combined. Gradually add the remaining flour in 1/2 cup increments until the dough forms.
  • Transfer the dough to a lightly floured surface and knead for 5 to 7 minutes until smooth and springy. Place the dough back in the bowl, cover with a damp cloth, and let it rest on top of the oven for 10 to 20 minutes.
  • Combine brown sugar, vanilla extract, almond extract, cinnamon, nutmeg, and cardamom in a bowl. Add 3 tablespoons of vegetable oil and mix well.
  • Roll out the dough on a floured surface into a large rectangle. Spread the brown sugar mixture evenly over the dough, then sprinkle with pecans. Roll the dough tightly along the longer side of the rectangle. Cut into 1 1/2-inch segments using a length of thread. Arrange the rolls swirl-side up in the prepared baking pan.
  • Place a damp cloth over the baking pan and let it rise on top of the oven for 30 to 40 minutes, then uncover.
  • Bake until the rolls are beautifully golden brown, approximately 30 minutes.
