Vegan caramel fudge with authentic flavor made in 7 simple ingredients.
Ingredients:
  • 2 x 400ml cans coconut milk
  • 215.00 gm caster sugar
  • 180.00 gm brown sugar
  • 55.60 gm glucose syrup
  • 138.60 gm coconut oil
  • 2 tsp vanilla bean paste
  • 8.80 gm toasted flaked coconut
Instructions:
  • Grease a 6cm-deep, 19cm square cake pan and line the base and sides with parchment paper, leaving a 2cm overhang.
  • In a large, heavy-based saucepan over medium heat, mix coconut milk and caster sugar until the sugar dissolves and the mixture comes to a simmer. Reduce heat to medium-low and continue to simmer and stir for 40 minutes until the mixture thickens to a custard-like consistency.
  • Lower the heat and introduce brown sugar, glucose syrup, coconut oil, and vanilla into the pan. Stir and cook for 4 to 5 minutes until the mixture is liquified and silky (it may look separated initially, just keep stirring). Turn the heat to medium-low and cook, stirring non-stop, for 6 to 8 minutes until the mixture thickens and coats the back of a wooden spoon.
  • Pour the mixture into the prepared pan and spread it to level. Sprinkle with flaked coconut. Allow it to set in a cool, dark place for 4 to 5 hours until cold and firm. Cut into small squares and serve according to the note.
