Vegan popcorn coated in luscious dairy-free caramel made with coconut milk, brown sugar, and corn syrup.
Ingredients:
  • 2 tablespoons vegetable oil, or more to taste
  • 1.25 cups popcorn kernels
  • 2 cups brown sugar
  • 1 cup light corn syrup
  • 0.5 cup coconut oil
  • 1 teaspoon salt
  • 1 (11.25 ounce) can sweetened condensed coconut milk
Instructions:
  • In a large pot over medium-high heat, heat 2 tablespoons of vegetable oil. Add 4 popcorn kernels and cover until they pop. Once popped, add the rest of the kernels in an even layer. Cover, remove from heat for about 30 seconds, and then return to heat. Shake the pot gently until popping slows, for about 1 to 2 minutes.
  • Divide the popcorn into large bowls and leave them aside.
  • In a sturdy pot over medium-high heat, melt together brown sugar, corn syrup, coconut oil, and salt. Stir occasionally until the mixture reaches 270 degrees F (132 degrees C) on a candy thermometer. Stir in condensed milk, and continue heating until it reaches 270 degrees F (132 degrees C) again. Remove from heat, let it cool for a minute, then stir in the vanilla extract.
  • Coat popcorn thoroughly by drizzling hot caramel over it and mixing until evenly covered.
