Vegan-Friendly Caramel Buttercream

Vegan-friendly brown sugar-caramel buttercream frosting made with margarine and soy milk, no eggs or milk needed.
Ingredients:
  • 0.5 cup vegan margarine
  • 1 cup brown sugar, not packed
  • 0.25 cup soy milk
  • 1 teaspoon vanilla extract
  • 0.5 cup shortening
  • 5 cups confectioners' sugar
Instructions:
  • Combine margarine and brown sugar in a pan, stirring until they come to a boil over medium-high heat. Cook for 1 minute until dark brown. Remove from heat and whisk in soy milk and vanilla extract until smooth.
  • Cream the shortening with 2 cups of confectioners' sugar in a mixing bowl until smooth. Gradually beat in the brown sugar mixture, alternating with the rest of the confectioners' sugar until combined.
