Simmer coconut milk, brown sugar, and margarine for a rich vegan caramel sauce.
Ingredients:
  • 1 cup coconut milk
  • 0.33333334326744 cup brown sugar
  • 2 tablespoons vegan margarine (such as Earth Balance®)
  • 2 teaspoons vegan margarine (such as Earth Balance®)
Instructions:
  • In a saucepan, mix coconut milk, brown sugar, 2 tablespoons plus 2 teaspoons margarine, and vanilla extract. Warm over low heat, stirring occasionally, until the mixture reaches 236 degrees F (113 degrees C) on a thermometer. Remove from heat and incorporate any separated grease or carefully discard it.
