"Zesty vegan ceviche with hearts of palm, tomatoes, onion, and cilantro, topped with spicy serrano peppers. Enjoy as a refreshing tostada topping or flavorful dip."
Ingredients:
  • 3 (14.1 ounce) cans hearts of palm, cut into 3/4-inch slices, juice reserved
  • 3 plum tomatoes - peeled, seeded, and chopped
  • 0.5 onion, finely chopped
  • 3 serrano peppers, seeded and minced, or to taste
  • 0.5 cup chopped cilantro leaves
  • 2 tablespoons white vinegar
  • 0.5 teaspoon dried oregano
  • salt and ground black pepper to taste
  • 0.5 cup pitted green olives
  • 1 avocado - peeled, pitted, and sliced
Instructions:
  • Combine hearts of palm slices with fresh tomatoes, onion, cilantro, and spicy serrano peppers in a beautiful glass bowl.
  • In a bowl, pour 3/4 cup of hearts of palm juice, then discard the rest. Add vinegar and olive oil to the bowl. Pour the mixture over the hearts of palm. Season with oregano, salt, and pepper. Top with olives and avocado slices for garnish.
