Vegan mushroom masala bursting with Indian flavors, ideal with rice or chapati.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 (2 inch) cinnamon stick
  • 1 teaspoon cumin seeds
  • 2 pods green cardamom
  • 2 whole cloves
  • 1 star anise
  • 1 bay leaf
  • 0.5 onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 tomatoes, pureed
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon chili powder, or to taste
  • salt to taste
  • 8 ounces mushrooms, thinly sliced
  • 1 tablespoon cashew powder
  • 1 teaspoon garam masala
  • 0.5 teaspoon kasoori methi
Instructions:
  • In a medium saucepan over medium heat, warm the oil until shimmering. Add cinnamon, cumin seeds, green cardamom, cloves, star anise, and bay leaf. Stir for about 30 seconds to infuse the oil with aromatic flavors.
  • 1. Cook onion until slightly caramelized, about 10 minutes. Add ginger-garlic paste and cook until the fragrance diminishes, about 1 minute. Mix in tomatoes and cook for 3 to 4 minutes. Sprinkle in coriander powder, turmeric, and chili powder. Simmer until the sauce thickens, 3 to 5 minutes. Stir in salt. Add mushrooms and coat with sauce.
  • Add water to the pot, then let the mushrooms simmer in the sauce until they become slightly tender, which should take around 5 to 7 minutes. Mix in cashew powder and garam masala, then continue stirring for approximately 2 minutes. Crush the kasoori methi into small pieces and incorporate into the dish. Finally, take the pot off the heat and serve your delicious meal.
