Tangy lemon-garlic marinated mushrooms - a zesty, vegan summer delight.
Ingredients:
  • 2 cups vegetable oil, or more to taste
  • 1 cup lemon juice, or more to taste
  • 2 bunches curly-leaf parsley, roughly chopped
  • 0.25 cup salt
  • 8 cloves garlic, chopped
  • 2 tablespoons ground black pepper
  • 5 pounds whole fresh mushrooms, thinly sliced
Instructions:
  • Combine vegetable oil, lemon juice, fresh parsley, salt, minced garlic, and black pepper in a large serving bowl. Add mushrooms and toss to coat evenly.
  • Cover the bowl with plastic wrap and chill in the refrigerator, giving it an occasional toss, for at least 4 hours.
