Vegan oatmeal raisin cookies with soy milk and shortening for a delicious twist on a classic treat.
Ingredients:
  • 0.75 cup shortening
  • 1 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 0.5 cup vanilla-flavored soy milk
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 3 cups rolled oats
  • 1 cup chopped walnuts
  • 1 cup raisins
Instructions:
  • Preheat the oven to 350°F (175°C) for perfect cooking temperature.
  • In a large bowl, cream together shortening, brown sugar, white sugar, and vanilla extract until smooth. Gradually mix in soy milk until fully incorporated.
  • Combine flour, cinnamon, baking soda, salt, and nutmeg in a separate bowl. Blend into the sugar mixture, mixing thoroughly. Gently stir in oats, walnuts, and raisins until a thick cookie dough forms.
  • Using a tablespoon, shape dough into balls and place on cookie sheets. Gently press to flatten cookies before baking.
  • Bake in the preheated oven until edges turn golden brown, about 12 to 15 minutes. Allow to cool on the cookie sheets for 2 minutes before transferring to cooling racks.
