Indulgent vegan oatmeal chia cookies with coconut oil and applesauce are a satisfying treat!
Ingredients:
  • 2 cups rolled oats
  • 1 cup brown sugar
  • 0.66666668653488 cup whole wheat flour
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.66666668653488 cup applesauce
  • 3 tablespoons coconut oil
  • 1 cup dried cranberries
  • 0.5 cup chocolate chips
  • 0.25 cup shredded unsweetened coconut
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a bowl, mix oats, brown sugar, flour, chia seeds, cinnamon, baking soda, baking powder, and salt. Add applesauce and coconut oil, stirring until evenly mixed. Fold in cranberries, chocolate chips, and coconut. Spoon dough onto prepared baking sheet.
  • Bake until the cookie edges are lightly browned, about 10-15 minutes in the preheated oven.
