Wholesome vegan batter using oatmeal, chia seeds, and coconut oil creates delicious chocolate waffles adored by everyone.
Ingredients:
  • 3 cups white whole wheat flour
  • 2 cups quick-cooking oats
  • 1 cup white sugar
  • 0.5 cup unsweetened cocoa powder
  • 0.25 cup chia seeds
  • 1 teaspoon sea salt
  • 4.5 cups almond milk, or more to taste, divided
  • 0.5 cup coconut oil, melted
Instructions:
  • Combine flour, oats, sugar, cocoa powder, chia seeds, baking powder, and salt in a large bowl. Pour in 3 cups of almond milk and coconut oil. Stir with a wooden spoon until the batter is fully mixed. Cover and refrigerate for 8 hours to overnight.
  • Preheat a Belgian waffle iron as recommended by the manufacturer.
  • Incorporate 1 1/2 to 2 cups of almond milk into the batter until it reaches a luscious cake batter consistency.
  • Add a generous 1/2 cup of batter onto the hot iron and spread evenly to the edges. Close the iron and cook until the steaming ceases, around 5 minutes. Repeat with the rest of the batter.
