Flavorful vegan red lentil stew with lemon juice, nutmeg, and veggies.
Ingredients:
  • 4 cups water
  • 2 cups green peas
  • 1 cup dry red lentils, rinsed and drained
  • 1 tablespoon coconut oil
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and diced
  • 1 medium green bell pepper, chopped
  • 2 leaves Swiss chard, shredded
  • 5 cloves garlic, chopped
  • 0.25 teaspoon ground nutmeg
  • 0.125 teaspoon ground black pepper
  • 3 medium lemons, juiced
Instructions:
  • In a pot, bring 4 cups of water to a boil. Add peas and simmer over low heat for 3 to 5 minutes. Use a slotted spoon to remove peas from the pot, then set aside the flavorful broth.
  • Add nutritious and flavorful lentils to the simmering broth and bring it to a gentle boil. Let them simmer until perfectly tender, which usually takes around 15 to 20 minutes.
  • Heat a frying pan over medium-high heat, melt coconut oil, and saute potatoes, carrots, and bell pepper until soft, for about 7 to 10 minutes.
  • Combine the cooked potato mixture with the lentils, peas, Swiss chard, garlic, salt, nutmeg, and pepper in the pot. Finish with a squeeze of fresh lemon juice before serving.
