Vegan Skillet Apples

Caramelized apples in a butter-free skillet sauce, perfect as a vegan dessert solo or with non-dairy ice cream.
Ingredients:
  • 4 large Golden Delicious apples
  • 0.25 cup water
  • 2 tablespoons muscovado (dark brown) sugar
  • 2 tablespoons apricot jam
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 tablespoon water
  • 1 teaspoon cornstarch
Instructions:
  • Begin by warming a generous skillet over medium-low heat. Peel and core the apples, then slice them into quarters and each quarter into 3 pieces. Immediately transfer the sliced apples into the skillet.
  • Combine 1/4 cup water, muscovado sugar, jam, cinnamon, and nutmeg with the apples. Allow them to cook covered until tender for about 10 minutes. Shake the skillet gently to mix the apples without using utensils. Avoid opening the lid while cooking.
  • Combine 1 teaspoon of water with cornstarch in a small bowl, creating a slurry. Mix into the apples until creamy. Remove from heat and let cool for 5 minutes before serving.
