Delicious and flavorful vegan tofu meatballs with pecans and nutritional yeast, served in sweet and tangy sauce, perfect for parties!
Ingredients:
  • 0.5 cup warm water
  • 2 tablespoons egg replacer
  • 1 cup shredded vegan cheese
  • 0.5 cup grated tofu
  • 0.25 cup nutritional yeast
  • 1 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 0.5 cup finely chopped onion
  • 0.5 cup finely chopped pecans
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried sage
  • 1 cup dry bread crumbs, or more as needed
  • 0.75 cup grape jelly
  • 0.5 cup ketchup
  • 0.25 cup olive oil
  • 0.25 cup white vinegar
  • 1 tablespoon chopped garlic
  • 1 teaspoon dried oregano
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Combine warm water and egg replacer in a large bowl. Fold in vegan cheese, tofu, nutritional yeast, salt, and garlic powder. Integrate onion, pecans, Italian seasoning, basil, and sage until thoroughly mixed. Gradually add bread crumbs until a moist, crumbly consistency is achieved.
  • Shape mixture into compact 1 1/2-inch balls and arrange them in an 8-inch baking pan.
  • Combine grape jelly, ketchup, olive oil, vinegar, minced garlic, and oregano in a separate bowl before pouring over the meatballs.
  • Cook the meatballs in the warm oven until they are nice and firm, for about 35 to 40 minutes.
