Sweet and sour lentil sweet potato mash

Whip up a scrumptious sweet potato lentil mash - perfect for vegans, vegetarians, or as a tasty barbecue side dish.
Ingredients:
  • 250.00 ml dried red lentils, rinsed
  • 800g orange sweet potato, peeled, chopped
  • 20.00 ml tamarind purée
  • 16.00 gm brown sugar
  • 11.80 gm wholegrain mustard
  • 1 green onion, thinly sliced diagonally
  • 1 tsp sesame oil
  • 1.50 gm sesame seeds, toasted
Instructions:
  • In a medium saucepan, combine lentils and sweet potato. Cover with water and bring to a boil over medium-high heat. Simmer for 15 minutes or until tender. Drain using a fine sieve.
  • Combine the lentil mixture with tamarind, sugar, and mustard in a large bowl. Season generously with salt. Use a potato masher to create a smooth consistency. Finish by folding in 3/4 of the onion.
  • Finish the mashed dish with a drizzle of oil, a sprinkle of sesame seeds, and the rest of the onion before serving.
