Transform traditional Southern collard greens with tender greens simmered in bacon drippings, sugar, and vinegar for a nostalgic, irresistible flavor.
Ingredients:
  • 6 slices bacon, chopped
  • 0.5 cup water
  • 0.25 cup vinegar
  • 0.125 teaspoon salt
  • 0.125 teaspoon black pepper
  • 2.5 pounds fresh collard greens, tough stems removed and leaves torn into bite-size pieces
Instructions:
  • Fry the bacon in a large Dutch oven over medium heat until perfectly crispy and browned, approximately 8 minutes, stirring frequently. Use a slotted spoon to move the bacon pieces to a bowl, allowing the flavorful drippings to remain in the pan.
  • Combine water, vinegar, sugar, salt, and black pepper with the bacon drippings until the sugar dissolves. Bring to a boil. Add collards, stir well to combine. Cover and simmer until greens are tender, 30 to 45 minutes. Add more water or vinegar if needed to prevent dryness.
  • Transfer the vibrant greens into a beautiful serving dish, then generously shower them with the savory cooked bacon pieces.
