Tofu scramble with plant-based milk, nutritional yeast, and spices makes a delicious vegan breakfast option.
Ingredients:
  • olive oil cooking spray
  • 1 (16 ounce) package firm tofu, drained and patted dry
  • 1 tablespoon nutritional yeast
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground turmeric
  • 2 tablespoons almond milk
Instructions:
  • Coat a skillet with olive oil cooking spray and heat over medium. Crumble tofu with your hands into smaller pieces; cook for 4 minutes.
  • Blend in nutritional yeast, 1/2 teaspoon salt, garlic powder, and turmeric. Allow the flavors to meld by stirring occasionally and crumbling tofu with a spatula for about 1 minute. Pour in almond milk and simmer until fully absorbed, approximately 2 minutes. Add salt and pepper to taste, then serve this warm delight.
