Vibrant grape and cranberry chickpea wild rice salad - ideal for parties and vegan-friendly.
Ingredients:
  • 3 cups water
  • 1 cup wild rice
  • 6 stalks green onion
  • 0.5 cup sliced red grapes
  • 0.5 cup rinsed canned chickpeas
  • 0.25 cup dried cranberries
  • 1 teaspoon chopped fresh rosemary
  • 2 medium lemons
  • 1 pinch dried oregano
  • 2 tablespoons maple syrup
  • 1 tablespoon extra-virgin olive oil
Instructions:
  • Combine water and rice in a saucepan. Simmer covered over medium heat for about 40 minutes until rice is tender and starting to split. Remember to slightly undercook the rice to maintain its texture.
  • After draining, chill in the refrigerator for 15 minutes.
  • Thinly slice the green onions and save a small amount for garnish. Combine the rest with grapes, chickpeas, cranberries, garlic, and rosemary in a bowl.
  • Juice lemons into a bowl, being careful to remove seeds. Stir in salt and oregano until oregano is crushed and infuses the lemon juice. Whisk in maple syrup and olive oil until dressing starts to come together.
  • Combine the cooled rice with the salad mix before adding the dressing and gently tossing everything together. Finish by garnishing with the reserved green onions.
