Wild rice, cranberry and walnut salad

Ingredients:
  • 250.00 ml basmati and wild rice blend (see note)
  • 250.00 ml dried cranberries
  • 2 sticks celery, thinly sliced
  • 115.00 gm walnuts, roughly chopped
  • 36.40 gm olive oil
  • 40.00 ml red wine vinegar
Instructions:
  • Prepare the rice according to package instructions in a large saucepan of boiling water until tender. Drain and allow to cool before using.
  • Mix together the rice, cranberries, celery, and walnuts in a bowl.
  • Combine oil, vinegar, salt, and pepper in a jar with a lid. Shake well. Pour over salad, toss, and enjoy!
