Try this tasty cranberry rice dish for a perfect side.
Ingredients:
  • 1 cup uncooked wild rice
  • 2 1/2 cups water
  • 1 medium onion, chopped (1/2 cup)
  • 1 cup sliced mushrooms
  • 2 1/2 cups Progresso™ chicken broth (from 32-ounce carton), heated
  • 1/4 teaspoon salt
  • 2 cloves garlic, finely chopped
  • 1 cup dried cranberries
Instructions:
  • Preheat oven to 350°. Grease an 8x8x2 inch square baking dish. Rinse wild rice under cold water in a wire strainer, using your fingers to ensure it's thoroughly cleaned.
  • In a 2-quart saucepan, bring water and wild rice to a boil. Stir occasionally, then reduce heat to low, cover, and simmer for 30 minutes. Drain excess water.
  • In a 10-inch skillet over medium heat, melt butter. Saute onion and mushrooms in the butter until the onion is tender. Combine the wild rice with the onion mixture in a baking dish. Mix broth, salt, and garlic together, then pour the mixture over the rice.
  • Bake covered for 1 1/4 hours, then add cranberries and bake covered for an additional 15 to 20 minutes until the liquid is absorbed.
