Wild rice & Brussels sprout super salad

Nutritious wild rice dish with higher fiber than white rice.
Ingredients:
  • 300 g mixed wild rice
  • 2 red onions
  • 2 tablespoons red wine vinegar
  • 500 g Brussels sprouts
  • 8 radishes
  • 1 lemon
  • 1 large bunch of mixed soft fresh herbs, such as mint, parsley, basil
  • 1 large handful of dried cranberries or raisins
  • extra virgin olive oil
Instructions:
  • Prepare the wild rice as instructed on the packet, then drain and allow it to cool on a large tray. Peel the onions and thinly slice them using a mandolin or a food processor with a fine slicing attachment. Place the sliced onions in a bowl and mix in the red wine vinegar, then set aside. Shred the sprouts and radishes using a mandolin, and in a separate bowl, toss them with lemon juice and a pinch of sea salt, ensuring the flavors are well combined. Set aside. Finely chop the herb leaves and place them in a large serving bowl. Add the cooked rice, marinated onions, lemony sprouts and radishes, as well as the cranberries or raisins, and gently mix together. Drizzle with oil, season to taste, mix well, and serve.
