Wild Rice and Beef Casserole

Delicious beef and rice casserole ready in under an hour for a satisfying dinner.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 package (6.2 oz) fast-cooking long-grain and wild rice mix
  • 1 can (10.75 oz) condensed tomato soup
  • 1/4 cup milk
  • 1/4 teaspoon pepper
Instructions:
  • Preheat oven to 350°F and generously coat a 2-quart casserole dish with cooking spray.
  • Brown the beef in a 10-inch skillet over medium heat for 8 to 10 minutes, stirring occasionally, then drain the excess fat.
  • Prepare rice mix according to package instructions, excluding the use of butter. Combine the cooked rice, soup, milk, and pepper with the beef and transfer the mixture to a casserole dish.
  • Bake covered for 30 minutes. Sprinkle with cheese and bake uncovered for an additional 5 to 10 minutes until the cheese is melted and the mixture is hot.
