Maple Balsamic Brussels Sprouts and Wild Rice Salads

Indulge in a savory salad featuring frozen Brussels sprouts and wild rice, complemented by crispy bacon and a hint of maple in the dressing.
Ingredients:
  • 4 teaspoons real maple syrup or maple-flavored syrup
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 box (10 oz) baby Brussels sprouts & butter sauce
  • 2 cups cold cooked wild rice
  • 1/2 cup thin bite-size strips yellow bell pepper
  • 3 tablespoons chopped red onion
  • 2 tablespoons real bacon bits
  • 4 large leaves Bibb lettuce, rinsed, patted dry with paper towels
Instructions:
  • Combine the syrup, vinegar, salt, and pepper in a medium bowl.
  • Prepare the Brussels sprouts according to the instructions on the box. Let them cool for 5 minutes. Add the sprouts to the syrup mixture in a bowl and gently stir to coat them. Mix in all the remaining ingredients except for the salad greens and ensure everything is well combined.
  • Chill in the refrigerator for about 1 hour until cold. Serve by placing a lettuce leaf on each of 4 individual plates and topping them with the salad mixture.
