Kick off your meal with crispy Indian vegetable bhaji.
Ingredients:
  • 250g chickpeas
  • 1 tsp chilli powder
  • 250g pkt rainbow mixed vegetables (see note)
  • Sunflower oil, to deep-fry
  • Fried fresh curry leaves (see note), to garnish (optional)
  • Natural yoghurt, to serve
Instructions:
  • In a bowl, combine chickpea flour, chilli powder, ground turmeric, and 1 teaspoon salt. Mix in 1/3 cup (80ml) water until a thick batter forms, then add the vegetables.
  • Fill a large saucepan or deep-fryer halfway with oil. Heat it to 190°C on a deep-fryer thermometer or until a cube of bread turns golden in 30 seconds.
  • Fry heaped tablespoons of bhaji batter in 3 batches for 3-4 minutes until crisp and golden. Use tongs to carefully remove them and let them drain on paper towel. Keep warm as you cook the rest of the bhaji.
  • Transfer the bhaji to a serving platter and optionally sprinkle with the fried curry leaves. Serve warm with natural yoghurt and tomato kasundi.
