Squash & paneer bhaji flatbreads

Whip up a flavorful mixed vegetable bhaji using onion, chilies, and squash. Pair it with homemade flatbreads for a cost-effective and delicious meal.
Ingredients:
  • 1 red onion
  • 2 cloves of garlic
  • 1 red chilli
  • 1 bunch of coriander (30g)
  • 75 g paneer cheese
  • 200 g butternut squash
  • 4 cm piece of ginger
  • 350 g self-raising flour
  • 1 lime
  • 2 teaspoons rogan josh curry paste
  • olive oil
  • 4 tablespoons natural yoghurt
  • 1 baby gem lettuce
  • 2 uncooked poppadoms
  • 4 teaspoons mango chutney
Instructions:
  • Finely slice the onion, garlic, and chilli, and chop the coriander stalks. Grate the paneer, squash, and ginger. Mix in flour, salt, pepper, lime juice, curry paste, and water. Form mixture into 4 rounds and fry until golden. Combine remaining flour, water, and oil to make a dough, then flatten into flatbreads and cook. Make coriander yoghurt. Shred lettuce and heat poppadoms. Top flatbreads with coriander yoghurt, poppadoms, bhaji, mango chutney, coriander leaves, lettuce, and crispy squash seeds. Serve with lime wedges.
