Indian Vegetable Bhaji

Spiced Indian vegetable medley with potatoes, cauliflower, carrots, peas, garlic, and chilies - ideal side for an Indian meal.
Ingredients:
  • 4 large potatoes, finely chopped
  • 1 cup cauliflower florets
  • 1 carrot, finely chopped
  • 0.5 cup fresh green peas
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 1 teaspoon cumin seed
  • 1 teaspoon black mustard seed
  • 2 whole bay leaves
  • 4 green chile peppers, chopped
  • 3 cloves garlic, chopped
  • 2 teaspoons minced fresh ginger root
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 0.5 teaspoon chili powder
  • 1 sprig cilantro leaves for garnish
Instructions:
  • Combine all the vegetables in a microwave-safe bowl and cover with plastic wrap. Microwave on High for about 2 minutes until hot and slightly tender. Remove the plastic wrap and drain the vegetables in a colander.
  • 1. Heat vegetable oil in a large skillet over medium heat. Sauté onion until golden, approximately 10 minutes. Add cumin seed, black mustard seed, and bay leaves and sauté until seeds sizzle, about 30 seconds. Add green chilies, garlic, and ginger and cook until garlic browns, around 1 minute.
  • Add ground cumin, curry powder, and chili powder to the pot, then mix in the partially cooked potatoes, cauliflower, carrot, and peas. Cook and stir until the vegetables are tender and fully infused with spices, about 30 minutes. Garnish with fresh cilantro leaves before serving.
