Vegetables simmered in savory broth, tossed with creamy cheddar, herbs, and pepper.
Ingredients:
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped onion
  • 0.25 cup margarine
  • 1 cup chopped celery
  • 1 cup cauliflower, chopped
  • 1 cup diced carrots
  • 1 cup fresh chopped broccoli
  • 3 cups water
  • 3 cubes chicken bouillon
  • 0.5 cup all-purpose flour
  • 1 tablespoon chopped fresh parsley
  • 3 cups shredded Cheddar cheese
  • salt to taste
  • ground black pepper to taste
  • 1.5 cups milk
Instructions:
  • Saute the peppers and onions in butter in a Dutch oven until tender.
  • Combine the rest of the vegetables with water, bouillon, salt, and pepper in the pot and bring it to a boil. Lower the heat, cover, and simmer for 20 minutes until the vegetables are tender.
  • Whisk together flour and milk until velvety; stir into the pan. Bring soup to a boil; cook and stir for 2 minutes. Fold in the parsley. Right before serving, gently mix in the cheese until it melts.
