Ingredients:
  • 2 tablespoons butter
  • 0.25 teaspoon dried basil
  • 0.25 teaspoon ground black pepper
  • 0.125 teaspoon salt
  • 1 cup cubed potato
  • 0.5 cup chopped carrot
  • 0.25 cup sliced green onions
  • 1 cup half-and-half
  • 0.75 cup frozen corn, thawed
Instructions:
  • In a saucepan over medium heat, melt butter. Add flour, basil, pepper, and salt, then pour in chicken broth. Cook and stir until the mixture thickens and comes to a boil, about 5 to 7 minutes. Stir in potato, carrot, and green onions. Bring to a boil, then simmer until potatoes are mostly tender, about 10 to 15 minutes.
  • Combine the half-and-half and corn into the broth mixture, stirring continuously. Cook until the chowder is heated through, approximately 5 minutes.
