Transform stir-fry veggies into irresistible family-friendly fritters.
Ingredients:
  • 400g pkt traditional stir-fry mix
  • 130g plain flour
  • 2 single clove garlic, peeled and crushed
  • 180ml water
  • Oil for deep frying
  • 125.00 ml natural yoghurt
  • Steamed white rice, to serve
Instructions:
  • Transfer the classic stir-fry into a spacious mixing bowl. Cut the broccoli and snow peas into smaller pieces. Introduce flour, half of the garlic, water, and season with salt and pepper. Stir well to blend.
  • Heat a wok filled one-third full with oil over moderately high heat. Spoon heaped tablespoons of fritter mixture into the hot oil and deep fry for approximately 5 minutes, turning occasionally until crispy and golden. Place on a platter lined with paper towel to drain. Repeat with the rest of the batter.
  • Combine the remaining garlic with yogurt and serve alongside warm fritters and steamed rice.
