Crispy vegetable fritters made with zucchini, yellow squash, and carrots - a healthy and tasty appetizer or side dish.
Ingredients:
  • 2 cups shredded zucchini
  • 1 cup shredded yellow squash
  • 1 cup shredded carrots
  • 1 cup corn muffin mix
  • 1 teaspoon baking powder
  • 0.5 teaspoon sweet paprika
  • 2 large eggs, lightly beaten
  • 2 tablespoons vegetable oil, or more as needed
Instructions:
  • Combine zucchini, squash, carrots, and salt in a colander to drain for 15 minutes. Use a clean kitchen towel to press out excess moisture from vegetables before transferring them to a medium bowl.
  • In a large bowl, mix together corn muffin mix, baking powder, and paprika. Add vegetables and beaten eggs, stirring until thoroughly combined.
  • Heat 2 tablespoons oil in a large skillet over medium heat, swirling to coat the bottom. Spoon zucchini batter into the hot oil, flatten with a spoon, and fry until golden brown, about 1 to 2 minutes per side. Drain fritters on paper towels and repeat with remaining batter, adding more oil as required.
