Exciting veggie kebabs kids will love!
Ingredients:
  • 120 g halloumi cheese
  • 1 yellow pepper
  • 1 courgette
  • 140 g cherry tomatoes
  • ½ a bunch of fresh mint (15g)
  • ½ a fresh red chilli optional
  • 1 lemon
  • olive oil
Instructions:
  • Soak 6 wooden skewers in cold water to prevent burning. Cube the halloumi and add to a mixing bowl. Prep the pepper, courgette, and tomatoes, then add to the bowl. Chop mint leaves, deseed and chop chili, and grate lemon zest onto a board; add to the bowl with 2 tablespoons of olive oil and pepper. Mix well. Preheat grill. Grease a baking tray. Thread halloumi, tomatoes, pepper, and courgette onto skewers. Grill for 10-12 minutes until cheese is golden and veggies are soft, turning halfway. Serve with green salad and flatbreads.
