Vegetable koftas with saffron rice

Nutritious lentil-vegetable koftas make a delectable, meat-free meal option.
Ingredients:
  • 200g (1 cup) Basmati rice
  • 1/4 tsp saffron threads
  • 50g butter
  • 2 large coliban potatoes, cut into 2cm pieces
  • 2 carrots, peeled, cut into 2cm pieces
  • 95g (1/2 cup) canned brown lentils, rinsed, drained
  • 80.00 ml fresh coriander
  • 40g (1/4 cup) plain flour
  • 1 tsp garam masala
  • 1 x 250g jar korma simmer sauce (Patak's brand)
  • 1 ripe tomato, finely chopped
Instructions:
  • Prepare the rice with saffron according to the package instructions for about 15 minutes. Once cooked, drain the rice and place it back in the pan. Add in half of the butter and mix well before covering to maintain its warmth.
  • Boil potato and carrot together for 6-7 minutes, then drain and combine with lentils in a bowl. Roughly mash and mix in chopped coriander, flour, and garam masala. Shape mixture into 12 patties, each about 8cm wide. Heat butter in a pan over high heat until foaming, then cook patties for 2-3 minutes on each side until golden.
  • Combine aromatic korma sauce and fresh tomato in a skillet over medium heat. Stir and cook for 2-3 minutes until the mixture is heated through.
  • Place the koftas on top of the rice, drizzle with sauce, and garnish with fresh coriander leaves.
