Vegetable nuggets

Kids will enjoy smashing veggies into cheesy nuggets!
Ingredients:
1 medium gold sweet potato, peeled, coarsely chopped
1headbroccoli, finely chopped
60g pea
80g corn cob
60g tasty cheese
150g plain flour
75g breadcrumbs
Instructions:
1. Preheat the oven to 200°C.
2. Line a baking tray with baking paper.
3. Boil the sweet potato until tender, then add broccoli and cook until bright green.
4. Drain well and mash with a potato masher until almost smooth.
5. Stir in peas, corn, and cheddar cheese until combined.
Form the mixture into 12 nuggets. Set up separate bowls with flour, egg, and breadcrumbs. Coat each nugget lightly with flour, then dip in egg, and coat in breadcrumbs. Arrange them on the lined tray. Repeat this process for the remaining nuggets. Enjoy!
Coat the nuggets with a mist of olive oil. Bake for 20 minutes, flipping halfway through, until they are golden brown and crispy. Serve right away.
