Flavorful nut loaf with roasted nuts, mushrooms, brown rice, and cheese - a perfect vegetarian Thanksgiving main dish.
Ingredients:
  • 1.5 cups walnuts
  • 0.5 cup pecans
  • 2 tablespoons butter
  • 1 medium onion, minced
  • 1 (8 ounce) package mushrooms, minced
  • 2 tablespoons minced fresh parsley
  • 1.5 teaspoons dried marjoram
  • 0.5 teaspoon dried thyme
  • 1.5 cups cooked brown rice
  • 12 ounces Cheddar cheese, grated
  • 1 cup cottage cheese
  • 4 large eggs, beaten
  • 1.5 teaspoons salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and spread walnuts and pecans on a baking sheet.
  • Roast nuts in the oven until beautifully golden and aromatic for about 7 minutes. Chop nuts once they have cooled slightly.
  • Preheat your oven to 375 degrees F (190 degrees C) and generously butter a 9x5-inch loaf pan before lining it with parchment paper.
  • In a large cast iron skillet over medium-low heat, melt butter. Add onion and cook until translucent for about 5 minutes. Stir in mushrooms, garlic, parsley, marjoram, and thyme; cook until mushrooms have softened, around 7 minutes.
  • Combine the cooked rice, chopped nuts, Cheddar cheese, cottage cheese, eggs, salt, and pepper in a bowl, stirring until well mixed. Transfer the mixture to the loaf pan.
  • Bake in the oven for about 1 hour and 10 minutes or until the top is rounded and golden. Let it cool for at least 10 minutes before slicing and serving.
